Chocolate Mochi
2 cups mochiko
2 eggs
1/4 cup butter
1 3/4 cups white sugar
3 TBSP cocoa
4 tsp baking powder
1 can coconut milk
1 can evaporated milk
Preheat oven to 350'. Melt butter in 9x13 pan. Set aside. Beat eggs with sugar in a lare mixing bowl. Add coconut milk and evaporated milk. Mix well. Add Mochiko, baking soda and cocoa to milk mixture. Mix until smooth. Pour into prepared pan and bake 1 hour. Cool completely before cutting with a plastic knife.
